has a strong Mediterranean feel accented with contemporary influences from throughout Asia & beyond including Vietnamese, Japanese.
Watermark doesn't classify itself under Fusion food, preferring to steer well clear of the frequently abused F-word. Instead it adopts a
refreshingly sensible, logical approach to cooking that enjoys pairing together new combinations without be daring for daring's sake.
Of course, sometimes there are classic matches which deserved to be repeated, or re-treated, with a modern twist but overall the most
important thing is that the emphasis is placed on the quality of ingredients and the natural flavors are allowed to speak for themselves.
